4.Physical properties: White monoclinic crystal powder, it is soluble in water, insoluble in ethanol. Its water solution is alkalic. It is liable to deliquesce by moisture in the air.

6.Usage: It is always applied in food industry as quality improver and emulsifier, like canned foods, fruit drinks, milk products like condensed milk, cheese, soybean milk and so on.
